Today at work, I did not consume as many clementines as the previous day. However, the thought of the fruit encouraged me to try cooking with them.
For dinner, I cleaned up some chicken breast and put them in a marinade of oil, garlic, salt, pepper, juice of 1 clementine, and a touch of lemon juice. Let that sit for a few hours. I played some Left 4 Dead 2 while the chicken was marinating. Prepared some asparagus by cutting "french style", also adding a little oil, salt and pepper; that cooked on a wide pan with a lid to keep the moisture in. I had some leftover mashed potatoes from Tuesday, just had to microwave that. I also read online that it is possible to create clementine sauce, so I put together the juice of 2 clementines, about 1/4 cup of sugar, and 2 tbsp of corn syrup in a small pot and brought that to a boil; during the cooling process I mixed in small amounts of water to make sure the sugars don't crystalized, but instead make a syrup. The resulting glaze tasted delicious on the chicken and asparagus... but also seemed like it was missing something. If I had it available, I would have added some white wine instead of water at the end, to give a real tangy punch to the flavor. I pan-grilled the chicken. One thing that helped a lot was beating the meat, thinning it out for even cooking.
Overall a pretty darn good meal.
Played some Doom, little bit of TV, then bed.
